He explains that while table sugar and high fructose corn syrup are composed of fructose and glucose in varying ratios, agave nectar is predominantly fructose (90%). According to Dr. Berg, this high fructose content can be damaging to the liver, as only the liver can metabolize fructose. The impact on the liver is similar to that of alcohol, leading to conditions like fatty liver, insulin resistance, bad cholesterol, high triglycerides, and high uric acid, which can lead to gout.


In comparison to fruit, Dr. Berg points out that the high fructose content in agave nectar is not buffered by fiber and other nutrients, which makes the fructose in fruit less harmful. While he acknowledges that fruit can affect weight loss, he warns against agave nectar because of its high sugar content and its potential to cause liver damage.
